NOVE: the avantgarde cuisine "made in Galicia"

They are « nove » (nine)... and they are « novos » (young).
They have been, and still are, a renovative movement of the Galician cuisine.
They are commited to a permanent search of new ways of expresion keeping always in mind the foundations that, fortunately, remain unalterable.
The secret of those “nove” is that they hadn’t break with their roots. It’s easy to identify their cuisine as Galician, but they have been able to dress it up with style. They hadn’t rejected the old ways, they just now the present and they adapt to it. They practice a Galician cuisine for today, so easy, so difficult.
And the future is theirs.

... we are so young. In Nove we have reunited a group of 17 professionals of the restoration in Galicia. We have experience and the same enthusiasm as in the beginnig. We reinvent everyday Galician cuisine without denying our origins. We bet on contemporary cuisine, paying attention to modern techniques and with the excellent ingredients Galicia offers us. We invite you to enjoy their colours, scent and textures, and to live the “Nove Experience”.

Galicia is a region at “the south of the British Islands”. Galicia is both larder and kitchen. As larder it is famous for the simplicity on its dishes. As kitchen it has produced during the last two centuries some of the best recipes of the country.

Grupo Nove was born in this context. They are a group of avant-garde chefs that use the rich larder that the sea and fields of Galicia can offer to modernize the Galician cuisine. They capture modern aesthetic and are guided by a professional ethic based on the respect to the product. They try to harmonize creativity and design keeping the organoleptic qualities of their creations.
